Ingredients
  

  • 1 lb ground beef
  • 1 yellow onion, diced
  • 1 tbsp taco seasoning
  • 2 cups enchilada sauce
  • 8 enchilada-size tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions
 

  • Preheat oven to 350°F.
  • Cook ground beef with diced onion and taco seasoning in a skillet over medium-high heat until fully browned. Drain excess fat.
  • Combine shredded cheddar and Monterey Jack cheese in a bowl.
  • Spread a small amount of enchilada sauce on the bottom of a baking dish.
  • Fill each tortilla with beef mixture and cheese, roll tightly, and place seam side down in the dish.
  • Pour remaining enchilada sauce over the top and sprinkle with remaining cheese.
  • Bake for 15 to 20 minutes until heated through and cheese is melted.

Notes

Drain excess grease from the beef to avoid soggy enchiladas. You can mix corn and flour tortillas for better texture. Add toppings like cilantro, olives, or green onions if desired. Recipe doubles easily for meal prep.
