Ingredients
  

  • 6 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil or melted butter
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme or Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper

Instructions
 

  • Preheat oven to 400°F (200°C). Pat chicken thighs completely dry with paper towels. In a small bowl, mix garlic powder, onion powder, paprika, herbs, salt, and pepper.
  • Rub chicken with olive oil or melted butter. Coat evenly with the seasoning mixture. Arrange thighs skin-side up on a baking tray, leaving space between each piece.
  • Bake for 35 to 45 minutes until the skin is crispy and internal temperature reaches 165°F (74°C). Broil for 2 to 3 minutes if extra crispiness is desired. Let rest for a few minutes before serving.

Notes

Pat the chicken dry for crispy skin. Do not overcrowd the pan. Use a rack if possible for better airflow. Boneless thighs cook faster but may be less juicy.
