Ingredients
  

  • 4 cups pitted fresh cherries, about 2 pounds
  • 1 cup granulated sugar
  • 1 cup water
  • 3 tsp fresh lime juice
  • ½ tsp kosher salt

Instructions
 

  • Freeze the ice cream maker bowl for at least 24 hours before starting.
  • Add sugar and water to a saucepan. Heat and stir until the sugar dissolves. Then let the simple syrup cool completely.
  • Add cherries, 1/2 cup simple syrup, lime juice, and salt to a blender. Blend until smooth.
  • Strain the mixture through a fine mesh sieve. Discard the solids.
  • Check sweetness with the egg-float test. Add more simple syrup if needed. Then taste and add extra lime juice if desired.
  • Cover the sorbet base and chill for 1 hour.
  • Churn in an ice cream maker until the mixture reaches a soft-serve texture, about 15 minutes.
  • Transfer to a freezer-safe container. Freeze for 2 to 4 hours, or until firm. Let sit briefly before scooping.

Notes

Use ripe cherries for the best flavor. Chill the sorbet base before churning for a smoother texture. Store in the freezer for up to 1 month. Let sit at room temperature for a few minutes before scooping.
