Ingredients
  

  • 2 peaches, diced into small pieces
  • 1 cup cherries, pitted and halved
  • 2 cloves garlic, minced
  • 1 large handful fresh cilantro, finely chopped
  • 1 jalapeño pepper, seeded and finely chopped
  • ½ small red onion, finely diced
  • 1 ½ limes, juiced
  • 1 lime, zested
  • salt, to taste

Instructions
 

  • Wash and prepare all produce. Dice the peaches, pit and halve the cherries, and finely chop the garlic, cilantro, jalapeño, and red onion.
  • Add the peaches, cherries, garlic, cilantro, jalapeño, and red onion to a mixing bowl.
  • Add lime juice, lime zest, and salt. Gently mix until evenly combined without crushing the fruit.
  • Refrigerate for 15 to 30 minutes to let the flavors blend. Stir before serving and adjust seasoning if needed.

Notes

Use ripe but firm peaches for the best texture. Fresh cherries give the best flavor, though thawed frozen cherries can work if drained well. Adjust the jalapeño to control the heat. Let the salsa chill for 15 to 30 minutes before serving for better flavor.
