Ingredients
  

  • 3-4 boneless skinless chicken breasts
  • lo mein noodles, fresh or dried
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ΒΌ cup low-sodium soy sauce
  • 1 tbsp sesame oil
  • 3 cloves garlic, minced
  • cooking oil for stir-frying

Instructions
 

  • Chop the vegetables into bite-sized pieces. Then cook the lo mein noodles until just tender, drain, and set aside.
  • Heat oil in a large skillet or wok over medium-high heat. Cook the chicken until browned and fully cooked, about 6-8 minutes. Then remove it from the pan.
  • Stir-fry the bell peppers, carrots, and green onions in the same pan until slightly tender but still crisp, about 3-4 minutes.
  • Return the chicken to the pan. Add the cooked noodles, soy sauce, sesame oil, and garlic.
  • Toss everything together until evenly coated and heated through. Serve immediately with extra soy sauce if desired.

Notes

For deeper flavor, marinate the chicken in soy sauce and garlic for at least 1 hour before cooking. Cook noodles only until al dente to prevent a mushy texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
