Ingredients
  

  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp chili powder
  • 800 g chicken breast, halved
  • 1.5 tbsp Cajun seasoning mix
  • 2 tsp olive oil
  • 25 g butter for cooking chicken
  • 2 cups uncooked long grain rice
  • 1 medium red onion, chopped
  • 5 cloves garlic, chopped
  • 0.5 tbsp Cajun seasoning mix for rice
  • 15 g butter for sauce
  • 0.5 tbsp Cajun seasoning mix for sauce
  • 250 ml milk
  • 150 g light cream cheese
  • 40 g Parmesan cheese
  • fresh parsley for garnish

Instructions
 

  • Combine salt, black pepper, garlic powder, onion powder, oregano, thyme, paprika, and chili powder to make the Cajun seasoning blend.
  • Coat the chicken with olive oil and 1½ tablespoons Cajun seasoning. Marinate for at least 30 minutes or overnight.
  • Heat 25 g butter in a large skillet over medium-high heat. Cook the chicken until golden brown and fully cooked. Let it rest, then slice.
  • In the same skillet, sauté the onion and garlic until fragrant. Add ½ tablespoon Cajun seasoning and stir in the rice. Toss until evenly coated and heated through.
  • For the sauce, melt 15 g butter over low heat. Stir in ½ tablespoon Cajun seasoning, then gradually whisk in the milk.
  • Add the cream cheese and Parmesan cheese. Stir until the sauce becomes smooth, creamy, and fully combined.
  • Divide the garlic rice among serving plates. Top with sliced Cajun chicken, spoon over the creamy Cajun sauce, and garnish with fresh parsley before serving.

Notes

For the best flavor, marinate the chicken overnight. Use day-old rice for a fluffier texture and keep the sauce over low heat to maintain a smooth, creamy consistency.
