Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1 tablespoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup milk
  • ½ cup vegetable oil
  • 2 eggs
  • 2 tablespoons sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions
 

  • Preheat oven to 375°F and prepare 16 to 18 muffin cups with grease or liners.
  • In a bowl, mix flour, sugar, baking powder, cinnamon, and salt.
  • In another bowl, whisk milk, oil, and eggs until smooth.
  • Pour wet ingredients into dry ingredients and stir gently until just combined. Do not overmix.
  • Divide batter evenly into muffin cups.
  • Mix sugar and cinnamon for topping and sprinkle over batter.
  • Bake for 13 to 15 minutes until a toothpick inserted in the center comes out clean.
  • Let muffins cool slightly before serving.

Notes

Do not overmix the batter to keep muffins soft. You can substitute oil with melted butter for a richer flavor. Store in an airtight container for up to 5 days or freeze up to 3 months.
