Ingredients
  

  • 2 ripe bananas, mashed
  • 2 eggs
  • ¼ cup honey or maple syrup
  • ¼ cup milk
  • 1 tsp vanilla extract
  • 1 ½ cups rolled oats
  • 1 tsp baking powder
  • ½ tsp cinnamon
  • ¼ tsp salt
  • cup chocolate chips or nuts (optional)

Instructions
 

  • Preheat oven to 350°F (175°C) and line or grease a muffin tin.
  • Blend oats into a flour-like texture for smoother muffins, or leave whole for a chunkier texture.
  • In a bowl, mix mashed bananas, eggs, honey or maple syrup, milk, and vanilla extract until smooth.
  • Add oats, baking powder, cinnamon, and salt. Stir until combined, then fold in optional add-ins.
  • Divide batter into muffin cups and bake for 18 to 25 minutes until a toothpick comes out clean. Cool before serving.

Notes

Use very ripe bananas for best sweetness. Do not overbake to keep muffins moist. Customize with chocolate chips, nuts, or berries.
