Ingredients
  

  • 2 slices ciabatta bread
  • ½ medium ripe avocado
  • 2 hard boiled eggs, peeled
  • ¼ cup mayonnaise
  • 2 tablespoons finely diced red onion
  • 2 tablespoons cooked finely chopped bacon
  • ¼ teaspoon paprika
  • ¼ teaspoon garlic salt
  • ¼ teaspoon black pepper
  • sriracha, to taste
  • fresh dill, for garnish
  • extra bacon crumbles for topping

Instructions
 

  • Combine hard boiled eggs, mayonnaise, red onion, chopped bacon, paprika, garlic salt, black pepper, and sriracha in a bowl. Mix and lightly mash until you reach your desired texture.
  • Toast bread slices until golden brown and crisp.
  • Mash avocado and spread evenly across each toast slice.
  • Top each toast with the egg mixture. Finish with extra bacon crumbles and fresh dill. Serve immediately.

Notes

Serve immediately for the best texture. Egg mixture and bacon can be prepared ahead and refrigerated. Add lemon juice to mashed avocado if making in advance to reduce browning. Turkey bacon works as a substitute. Adjust sriracha for desired heat level.
